Veg Fry-Up

One meal that isn’t my fav is a full English (am I still English?) there’s just something about the grease that makes me feel like I’ve been put in a deep fat fryer after I’ve eaten it. But this is my alternative which I could eat alldayeverday and not even feel guilty about it. If you haven’t tried this or something similar I urge you to. Feel free to switch it up abit by adding toast, more veg, meat etc.

Green Super Smoothie
I think smoothies are genius. Technically abit gross, with everything blended up, but they taste ~amazing~. Keeping with the theme, spinach is involved.. obviously. These make you feel full whilst also getting a load of healthy foods. If we ever run out of spinach for some crazy reason, I can recommend using anything green- from raw broccoli to celery whatever you have, it does still taste good.

Eggs & Soldiers with Asparagus
Boiled eggs & soldiers just reminds me of my childhood, I must have had dippy eggs for breakfast most days. Adding asparagus just makes it even tastier and makes it feel like a more adult breakfast.

It’s HERE! Technically it’s still Winter but as soon as I noticed a little cluster of flowers that had sprouted up out of nowhere I automatically starting saying ‘it’s spring.’ Spring is one of my favourites (although, I notice I say that about every season.) But blossom is just too pretty. It’s crazy how much a blue sky, a bit of sun and a few flowers can produce so much optimism/happiness/motivation etc. It’s just crazy uplifting, don’t you think?

I’m so excited for light evenings, so it feels acceptable to go and sit in a beer garden after work. For pretty dog walks, iced coffees, mojitos (as they taste so much better when the suns shining), driving with the windows down (!!!!), butterflies (!!!!!!!), and BBQ’s (!!!!!!!!!!!!!) Ah, so much excitement.

I don’t know about you but when Spring comes I automatically start whipping out brighter colours from my wardrobe and I think the lips are begging for a brightening too. Lipstick is obviously a huge staple for most females make-up bags but I think most stick to their usual colours that they feel comfortable with. But now the suns shining and we are slowly coming out of hibernation, it’s a good opportunity to mix things up in the make-up dept.

Sleek Matte Me Lip Gloss- Shabby Chic, £4.99.

You can never really go wrong with Sleek Make-up & this lipstick is perfect for Spring. It’s very mauve which is so so pretty and one of the smoothest liquid lipsticks I’ve used. This is probably the darkest I go in Spring time, otherwise I end up feeling a little too Autumnal. Ps. This is so long lasting!

Sleek Power Pump Lip Crayon- Fully Fuschia, £5.49.

Oh another Sleek. If you’re not into Matte lips or Glossy lips, this is the one for you. It’s more like lipstick consistency but the crayon design makes it way easier to apply. I would rarely wear this colour (even though it’s super pretty) but it’s just a little too pink for me. However… it looks fabulous on other people. My sister worked it for a party and side note, it looks so good with a black dress and subtle make-up.

KIKO Pencil Lip Gloss- Pink Glitter, £3.90.
So a KIKO store just opened where I live and lets just say Kiko will for sure be featuring in a lot more posts… the products are lush. I was pretty much testing everything in the store when I came across this gem. The best way I can describe it is a lipliner/lipstick/lip crayon/lipgloss- all into one little stick. It’s not super pigmented which I actually really like because it looks subtle and v natural- like your pout naturally sparkles. Ps. I’ve used this over the top of a bolder matte lip just to jazz it up a bit.

NYX Professional Makeup Round Lipstick- Snow White, £4.00.

I think it’s important to always have a classic, no matter what season it is. For me, red is the go-to. This lipstick has some coral tones to it, which I think gives it that Spring vibe. NYX’s products are always super pigmented which is so appealing when looking for a bright/bold lipstick.

Pancakes.

It’s Pancake day on Tuesday and today I spent the day making a stack of fluffy American pancakes- in order to perfect it for Tuesday. I’ll be totally honest pancakes aren’t my fav, they never have been really. Maybe it’s something to do with the word ‘cake’ being involved, but I do lovvvve making them- something v satisfying about the way they look. As well as listening to ‘Send Me On My Way’ – the Matilda pancake song (if you know, you know) whilst making them. There are endless options to top your pancakes… I went for a Nutella batch, a lemon batch and my personal fav ~berries & yoghurt~.

Pupcakes!

Everyone’s guilty of feeding their dog a little human food now and again. I mean…common’ dog kibble looks sooo boring. Missie does have a range of different dog treats however, those puppy dog eyes always bribe us into giving her something with a little more flavour. I had a weird cooking splurge this weekend and ended up baking some sweet treats for my family. However, I felt guilty the little pup was left out so I decided to bake her batch of her very own!


Ingredients: (It’s all dog friendly)

1 cup plain flour
1/3 cup porridge oats
1 tsp baking soda
1 banana
1 large egg
1/4 cup vegetable oil
1/4 cup honey
1 tsp pure vanilla extract

Frosting:
• 2 x Tubs cream cheese low fat
• Dog treats of your choice

Method:

-Pre heat your oven to 170 degrees Celsius, line cupcake tins with paper cases (remember to take these off before giving to your dog if you have a bit of a greedy pup).

-Mix all of the ingredients in a bowl and distribute evenly between the cupcake cases. Bake for 15 minutes and leave to cool before icing.

(They actually smelt and looked quite tasty)

-Using a spoon to dollop cream cheese on the cakes or as I did, use a disposable piping bag  I used a large star icing nozzle and piped in a circular motion. -I then popped a little puppy treat on top and enjoy!

Today I thought I’d write a toast post.
I’ve never met someone who doesn’t like toast- well as far as I know I haven’t.

Toast is such a simple tasty food that never disappoints. Personally, I love the classic- toast with butter.  However, it is nice to jazz it up a bit. I think my taste buds are a little like my imagination and crave flavour and stimulation, so it’s always good to have these super easy tasty toast ideas in mind…

Bananas & Honey.
Recipe- Make toast. Layer cut up banana on top and drizzle honey.

Salmon & Cream Cheese.

Recipe- Make toast. Spread your cream cheese over your toast, layer your salmon on top and sprinkle some pepper.

Avocado & Chilli.

Recipe- Make toast. Mash up an avocado, add dried chilli, salt, pepper and mix. Then spread it onto your toast.

Pesto, Mozzarella & Tomatoes.

Recipe- Make toast. Spread pesto then layer cut up/grated mozzarella and tomato on top!

Spinach & Ricotta Cannelloni.

Ingredients:
18 cannelloni tubes.
200g ricotta cheese.
500g spinach, washed.
50g parmesan cheese, grated.
50ml olive oil.
100g grated mozzarella.
1 egg.
Salt.
Pepper.

For the sauce:

2 cloves of garlic, minced.
1l passata.
1tsp caster sugar.
1tbs dried oregano.

Preheat your oven to 180 degrees.

Firstly, prepare the sauce by heating the olive oil in a large saucepan over a medium-high heat. Add the minced garlic and stir well, cooking it for 1 minute. Next add the passata to the saucepan and bring to a simmer. Then stir in the sugar, salt, pepper and oregano.
Simmer for 8-10 minutes, stirring often. Then remove the sauce from the heat and reserve to one side.


Now for the cannelloni itself…

Start by wilting the spinach, do this by placing it into a colander and pour boiling water over it. Repeat this twice. With a spoon press and stir the spinach to eliminate any excess water.

Once the excess water is drained, chop the spinach into smaller pieces.

Put the spinach into a bowel and combine the ricotta, parmesan, egg, salt, pepper and mix well.

Next up, you need to spoon the mixture into the cannelloni tubes- making sure they are filled well. I personally prefer to put the mixture into a piping bag first and then pipe it into the tubes, as it is easier and less messier- although you will find yourself fighting with it, depending on how large your piping nozzle is. However, if you haven’t got a piping bag, simply spoon it into the tubes.

Next, spoon some of the sauce you made earlier into a baking dish. Then arrange the filled cannelloni side-by-side in rows, making sure they are packed tightly. I only did two layers as otherwise I would have made too much but, if you want to do more- layer it up! Just be sure you have enough filling and tubes. (As you have probably noticed, I’m using a loaf pan- it was the only thing I had that fitted the tubes and that was non-stick. So remember to grease your dish if it’s not non-stick!)

Sprinkle the mozzarella on top and then spoon the sauce over the tubes, leaving a boarder on either side.

Bake for 25-30 minutes. Allow it stand for a few minutes before serving.
