It was one of those Saturday’s where I felt the need to bake something beautiful and keep my fingers crossed it doesn’t fail. Thankfully, this was a success (yasssss!!!) I saw a similar recipe on a food blog (who I can’t remember the name of.) And with the sun shining so much recently, I thought this would be perfect as it’s not too heavy- fyi, I think I mention the weather in nearly all of my posts…you wouldn’t know I’m British or anything.
This was SooOoO easy to make and is one of those recipes you can change up by adding different fruits. It also ~looks~ good (as you can see it’s super photogenic) which is a bonus for anyone who is all about the aesthetics of food.
Sight-seeing, cultural walking and wandering has my heart. I may be a stereotypical millennial cliché, just traipsing around the same old hipster area as everybody else but I love it. Which is why I’d *usually* always opt for a city break. However.. a big however. This year I went back to Portugal with my family and had ~the~ most relaxing week of the year (so far.)
After taking a few hours to actually locate our villa, we arrived and my fears of not seeing a spectacular building (I’m not an architect or anything but I really appreciate a good building) was no longer present as it was heavenly inside and out. From the modern décor, a balcony with a sea view to the tennis courts- it had ~everything~.
We stayed -just- outside of our usual destination Carvoeiro, but still ventured into the town each night.
I spent most of the days laying flat sunning on a lounger, flicking flying beetles that landed on us, having dips in the pool, watching Portuguese Netflix from my walk in shower and eating my body weight in fish for dinner. We also had a mini golf tournament on our putting green- which reminds me we never actually finished it. As well as, a walk on the cliffs/climbing rocks whilst wearing a mini skirt and espadrilles. It was the ultimate relaxation break (even though I feel like I now need another one) but at least the sun is starting to make an appearance in England.
If you love food, then you probably have a love for travel as well. Eating some exquisite Asian cuisines or classic American diner-style food from the comfort of your town is great, but have you ever wondered what real Asian food tastes like, or how delicious proper American-style food would be? Travelling to eat isn’t a new concept, but it’s certainly something that has been gaining a lot more traction thanks to informative food blogs like https://migrationology.com/ and YouTube superstars who travel, eat and record their findings for people to drool over and convince them to travel.
One meal that isn’t my fav is a full English (am I still English?) there’s just something about the grease that makes me feel like I’ve been put in a deep fat fryer after I’ve eaten it. But this is my alternative which I could eat alldayeverday and not even feel guilty about it. If you haven’t tried this or something similar I urge you to. Feel free to switch it up abit by adding toast, more veg, meat etc.
I think smoothies are genius. Technically abit gross, with everything blended up, but they taste ~amazing~. Keeping with the theme, spinach is involved.. obviously. These make you feel full whilst also getting a load of healthy foods. If we ever run out of spinach for some crazy reason, I can recommend using anything green- from raw broccoli to celery whatever you have, it does still taste good.
Boiled eggs & soldiers just reminds me of my childhood, I must have had dippy eggs for breakfast most days. Adding asparagus just makes it even tastier and makes it feel like a more adult breakfast.

It’s Pancake day on Tuesday and today I spent the day making a stack of fluffy American pancakes- in order to perfect it for Tuesday. I’ll be totally honest pancakes aren’t my fav, they never have been really. Maybe it’s something to do with the word ‘cake’ being involved, but I do lovvvve making them- something v satisfying about the way they look. As well as listening to ‘Send Me On My Way’ – the Matilda pancake song (if you know, you know) whilst making them. There are endless options to top your pancakes… I went for a Nutella batch, a lemon batch and my personal fav ~berries & yoghurt~.

You will need:
• 1 ½ cup butter
• heart cookie cutter
• 1 cup sugar
• 3 ½ cups flour
• ¼ tsp salt
• ¼ cup strawberry jam
• 1 tsp vanilla extract
• 1 bar white chocolate
• red/pink food colouring
• pink sprinkles
• Beat the butter and sugar until creamy. Then add the vanilla extract, flour, salt and mix.
• Shape your dough into a ball and place it in the fridge for 30 minutes to chill. Once chilled, roll out the dough- to the thickness of a £1 coin.
• Cut out your heart shapes using the cutter.
• Place the hearts onto baking paper and bake at 200 degree heat for 6-8 minutes.
• Once cooled. Turn half of your cookies upside down and spread some jam (I used a piping bag as it’s quicker and less messy.)
• Place the other cookies on top of the jam cookies and gently press together.
• Melt the white chocolate and add a tiny tiny bit of food colouring.
• Pour the melted chocolate into a piping bag (I used a tiny nozzle- if you’re just using a bag, cut the tip very small.)
• Drizzle the chocolate over one side of the cookies and immediately top with coloured sprinkles.
Gifts mean sooo much more if there are personal thoughts and touches that go into them. I felt like I’d gone really practical with my gifts this year, which left me thinking if I could make some of the presents a little more thoughtful. I can’t believe it’s Christmas Eve!!! Here are two very last minute DIY ideas to save you…
Cookie Mixture in a Jar.
So this one from the title sounds a little weird but trust me I think it’s wonderful. You may have seen these in the shops- they are so easy and simple to make and very cheap.
First, you need a glass jar. The size is up to you. I went for mason jar.
Now all you need to do is to measure out your dry cookie ingredients and layer them into the jar.
(Around 4-8 cookies depending on how big you make them.)
80g plain flour
1 tsp baking powder
80g soft brown sugar
30g coco powder
50g milk chocolate chips
50g white chocolate chips
Next, decorate your jar. I then attached a gift tag and wrote the instructions- ‘Just add: 80g butter, 1 egg, and bake at 170 degrees for 6-9 minutes. They also last pretty long as it’s only the dry ingredients.
These are really cute edible gifts.
First of all, preheat your oven to 190 degrees. Next mix together 110g butter 100g soft brown sugar. Add 1/2 cup of golden syrup and mix then add 340g plain flour. Now add, 1 tsp. bicarbonate soda. Then use your hands to form a dough and refrigerate for 10 minutes.
Now roll out the dough so it’s about 1/4 inch thick. Cut out your shapes- I used a star cutter of 3 different sizes. Place them on grease proof paper and bake them for 8-10 minutes, until their golden brown. Once they have cooled you can ice them.
Once the icing had dried. I stacked them, wrapped them in cellophane and tied them with a ribbon.
Autumn is the time of year when the nights are getting darker and colder and that means more cosy nights, blankets and hot drinks. I often stick to cold drinks as hot drinks make me too hot. However… the colder seasons are an excuse to finally fit them into my drinking habits.
This is the calorific, tasty, perfect hot chocolate. (Just a small side note- I don’t drink these on the daily basis. They do contain A LOT of sugar!)

-It’s hard to determine the measurements as everyone’s mugs are different sizes, if you feel you need to add more/less I’m sure it will taste just as good.
1 & 1/2 tbsp of Coco Powder.
Mug of Milk.
5 Squares of Dark Chocolate.
Icing Sugar (if needed.)
-In a saucepan heat up the milk and add the coco powder and 4 squares of dark chocolate. -Stir the mixture regularly until the chocolate has melted, the ingredients is combined and the mixture is hot.
-You may want to taste the mixture to see if it is sweet enough for you- if it isn’t add a little icing sugar. (But remember the marshmallows will sweeten it too.)
-Pour the mixture into your mug.
-Sprinkle a couple of marshmallows on the top, then add the whipped cream.
-Sprinkle some more marshmallows on the cream and grate your last square of chocolate on the top to finish.
Everyone’s guilty of feeding their dog a little human food now and again. I mean…common’ dog kibble looks sooo boring. Missie does have a range of different dog treats however, those puppy dog eyes always bribe us into giving her something with a little more flavour. I had a weird cooking splurge this weekend and ended up baking some sweet treats for my family. However, I felt guilty the little pup was left out so I decided to bake her batch of her very own!
Ingredients: (It’s all dog friendly)
1 cup plain flour
1/3 cup porridge oats
1 tsp baking soda
1 large egg
1/4 cup vegetable oil
1/4 cup honey
1 tsp pure vanilla extract
• 2 x Tubs cream cheese low fat
• Dog treats of your choice
-Pre heat your oven to 170 degrees Celsius, line cupcake tins with paper cases (remember to take these off before giving to your dog if you have a bit of a greedy pup).
-Mix all of the ingredients in a bowl and distribute evenly between the cupcake cases. Bake for 15 minutes and leave to cool before icing.
(They actually smelt and looked quite tasty)
-Using a spoon to dollop cream cheese on the cakes or as I did, use a disposable piping bag I used a large star icing nozzle and piped in a circular motion. -I then popped a little puppy treat on top and enjoy!

Today I thought I’d write a toast post.
I’ve never met someone who doesn’t like toast- well as far as I know I haven’t.
Toast is such a simple tasty food that never disappoints. Personally, I love the classic- toast with butter. However, it is nice to jazz it up a bit. I think my taste buds are a little like my imagination and crave flavour and stimulation, so it’s always good to have these super easy tasty toast ideas in mind…
Bananas & Honey.
Recipe- Make toast. Layer cut up banana on top and drizzle honey.
Salmon & Cream Cheese.
Recipe- Make toast. Spread your cream cheese over your toast, layer your salmon on top and sprinkle some pepper.
Avocado & Chilli.
Recipe- Make toast. Mash up an avocado, add dried chilli, salt, pepper and mix. Then spread it onto your toast.
Pesto, Mozzarella & Tomatoes.
Recipe- Make toast. Spread pesto then layer cut up/grated mozzarella and tomato on top!
